LOCKDOWN BANANA BREAD

Makes One Loaf Back in the times of hard lockdown, here in South Africa. To keep busy, I had taken to cooking up a storm and testing out new recipes. One of these recipes is a family favourite and all-round crowd pleaser, “Banana Bread”.

INGREDIENTS
250g self-raising flour
3 x ripe bananas, mashed
2 tbsp apple juice
125g salted butter, room temp.
3 x large eggs
1 tsp. ground cinnamon
3 tbsp honey
1/2 tsp. vanilla paste
2 tbsp castor sugar (optional)
1 tbsp cocoa powder (optional)
olive oil for greasing
METHOD
Preheat the oven to 180°C or 350°f.
Lightly grease a loaf baking tin with olive oil, and line with baking parchment paper.
Beat the butter with an electric whisk until creamy, then add the eggs, bananas, apple juice, honey and vanilla paste. Continue to beat the mixture until well combined.
Then, sieve the flour, cinnamon, castor sugar and cocoa powder into a bowl, and slowly add to the butter and banana mixture.
Give the mixture another whisk until both the dry and wet ingredients are well combined with each other.
Spoon the mixture into the baking tin, and sprinkle a little cinnamon on top.
Bake in the oven for +-40 minutes or until golden brown.
Serve warm with a little butter and a hot cup of your favourite tea.
Right now, there are loads of really great banana bread recipes out there. This one is the best of the lot (to me anyway). Why? Not only is it easy to bake but it is also a relatively healthier version of the original recipe, too. Give it a go, really. Let’s all try keep busy and stay positive as we move into the future.
