MEXICAN HOT CHOCOLATE

Serves 4
These recipes are super easy to put together for a dinner party, without all that fuss, and if you are as lucky as I am, you will have some stunning dishes to serve everything up in, making your night a total showstopper! To finish off, a decadent hot chocolate with a kick.

INGREDIENTS
70g 70% dark chocolate, and extra for grating over the top
2 cups full-cream milk
1 cinnamon stick
2 tsp organic honey (use more honey if you don’t want a bittersweet hot chocolate)
pinch of dried chilli flakes
½ cup cream, whipped
pinch of salt
METHOD
In a medium bowl, whip the cream until it reaches soft peaks, and set the mixture aside for later.
In a saucepan, on a medium, add the milk, cinnamon stick, chilli flakes and salt.
Once the milk has warmed, add the chocolate, and honey, and stir slowly until the chocolate has melted.
Once the chocolate has melted, remove from the heat.
Pour the hot chocolate into 4 espresso glasses, add the whipped cream on top, and grate over some chocolate to serve.
There you have it, the last of three great party dishes for the ultimate and easy Mexican evening. Kirsten and I, tried this initially as a hot drink in a mug. But after tasting it, we realised it would be best enjoyed in a little espresso cup as a sweet ending to a foodie evening, being more like a dessert than a regular cup of hot chocolate.
