PEA & BROCCOLI SALAD

Serves 6
Salads can get so boring. Especially when one does the classic lettuce and tomato setup each and every time. To mix things up a little bit, here is my take on a fresh summery salad, that is a little more filling and vitamin packed, than a boring old traditional salad.

INGREDIENTS
200g fresh or frozen peas (I prefer fresh peas)
230g fresh long-stemmed broccoli
handful of sugar snaps, thinly sliced
handful of radishes, some sliced and others left whole
handful of mint leaves
handful of micro herbs or rocket
1 lemon, juiced
1 small garlic clove, finely grated
glug of olive oil
salt & pepper, to taste
METHOD
On the stove top, in a steamer pot, on a medium heat, steam the broccoli, and add the peas below to boil in the water. Cook both the peas and broccoli for about +-10 minutes or until al denté.
While the peas and broccoli are cooking, slice the radishes and sugar snaps.
Remove the peas and broccoli from the heat, drain under cold water to stop them from cooking further. Put the drained veggies aside to cool.
While the veggies are cooling down. In a small jug, pour in the lemon juice, olive oil, garlic, salt and pepper. Give the mixture a good stir.
Arrange the veggies on a lovely serving dish, scattering the mint leaves and micro herbs on the top, and pour over your home-made dressing, or place it on the side for your guests to spoon over themselves.
With summer looming closer, I think it’s so important to get a few interesting summery salads on the ready for our friends and family. This salad is a definite staple to keep things fresh over these hotter days.
